Every now and then I get a craving for salmon patties. Whether you pronounce the, “L” or not, they are a versatile staple in our kitchen. If you’re wondering, I’ve decided that when I’m talking about a filet, I don’t pronounce the, “L”, when I’m talking about patties I do. Patties are a good southern classic and you can’t go around in the country not pronouncing the, “L” without people looking at you funny.
So like I was saying, I was craving /sal-muhn/ patties and at the same time I was bored with my regular mix. (Much to Maddox’s disappointment. He is the picky one and wants everything, “normal”) I love the traditional tex mex type seasonings, so I went with it. I thought about using a taco seasoning or fajita seasoning that was pre-packaged. If you are short on time, give that a try. But when I think of tex mex I think of two things: cumin and lime. Those seasonings never have enough of those two things for my taste, so I mixed my own.
Dump everything together, then mix it up until it looks like cat food. I know it’s gross at this stage, but it tastes better than it looks, I promise.
Now it’s time to make the patties. It helps them to cook evenly if you make them the same size. I’m bad at guessing how much to grab, so anytime I have this situation (meatballs, cookies) I use my scooper.
I use the scoopers so much, my big one broke, so I had to scoop four with my smaller scooper to get the right size.
You need enough oil to cover the bottom of the skillet. Refill if needed. Once the edges start turning brown, it’s time to flip.
I garnished it with a sweet chili sauce and cilantro. I was all over the place with my flavorings this time, but it tasted good to us. Don’t judge me, but I used dried cilantro. I just planted my herb garden last week and my fresh cilantro wasn’t ready yet.
Tex Mex Salmon Patties
Ingredients
2 cans salmon
3 Tbsp flour
3 eggs
1 tsp cumin
1 tsp chili powder
1/2 tsp smoked paprika
1 garlic clove
pinch of cayenne pepper (as hot as you like it)
1/2 tsp oregano
1/2 tsp lime juice
coconut oil
Directions
Heat coconut oil in a skillet. Use enough to cover the bottom. Add more as needed. Mix all the other ingredients. Shape into desired size of patties. When the edges turn brown, flip. Serve hot.
